• 12-16 ripe fresh figs (we used a half flat)
• 1 container of Delallo Greek Feta in Brine
• Balsamic Glaze
• Parisian Baguette
• Toasted chopped walnuts
• Red pepper Flakes (optional)
1. Prepare the Figs: Preheat oven to 400°F (200°C). Destem fresh fig. Cut an X at the top and go about a quarter of the way through the fig. Arrange the figs in a single layer on a baking sheet.
2. Bake the Figs: Bake for about 10 minutes, or until the figs are tender, jammy, and slightly caramelized, releasing their juices.
3. Feta: While the figs are baking, cut the feta block to get about ⅓” thick cubes of cheese
4. Bake the Feta: When figs are done, take them out and add a cube of cheese in the opening. Bake for another 5 minutes so the cheese melts
5. Prepare the Bruschetta Bread: Slice the baguette. Brush one side of each bread slice lightly with olive oil. You can toast the bread in a toaster, on a griddle pan over medium-high heat, or on a baking sheet in the oven (alongside the figs if there's room) at 400°F (200°C) for 5-7 minutes, or until lightly golden and crisp.
6. Assemble the Bruschetta: Once the bread is toasted, top with the fig and feta bake. Add red pepper flakes if using. Add toasted walnuts. Top with balsamic glaze
7. Serve: Serve warm or at room temperature. Enjoy!
Tips and Variations:
• Simpler: Cut the figs in halves or quarters, bake, and top with crumbled feta, walnuts, and balsamic
• Balsamic Glaze: If you don't have balsamic glaze, you can easily make your own by simmering 1/2 cup of balsamic vinegar in a small saucepan over medium-low heat until it reduces by half and becomes syrupy (about 10-15 minutes). Let it cool slightly, as it will thicken more as it cools.
• Feta Options: Crumble the feta or whip it and use it as a spread
• Other Cheeses: While feta is traditional, goat cheese or even a creamy burrata would also be delicious alternatives.
• Add Prosciutto: For a salty, savory addition, lay a small piece of prosciutto on top of the feta before adding the figs.
• Honey/Maple Syrup: A small drizzle of honey or maple syrup over the assembled bruschetta can enhance the sweetness of the figs.
