Chicago Style Shrimp Roll

Ingredients

For the Shrimp:

• 1 lb large shrimp, peeled and deveined (fresh or frozen, thawed)

• 1 tbsp olive oil

• 1tbs fresh chopped parsley

• 2 cloves garlic, minced

• Salt and freshly ground black pepper to taste

• White wine to deglaze (optional)

For the Dressing:

• ¾ cup St. elmo Cocktail sauce

• 1 cup mayo

• 1 cup sour cream

• 1 tbsp giardiniera relish

• Chopped fresh parsley and chopped fresh dill to taste (about 1tbs each)

• Salt and black pepper to taste

Cooking Guide

1. Sauté the Shrimp: Heat a large skillet over medium-high heat. Add garlic and saute until fragrant. Add the shrimp in a single layer. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Add in fresh parsley and white wine to deglaze. Do not overcook, as they can become rubbery. Remove from heat and set aside (or in refrigerator to cool)

2. Make the Dressing: In a small bowl, whisk together the cocktail sauce, sour cream, mayo, giardiniera relish, fresh dill and fresh parsley. Season with salt and pepper to taste.

3. Assemble the Salad: Cut the sauteed, peeled shrimp into bite sized pieces. Add the cooled, sautéed shrimp to the dressing and mix.

4. Toast Bun: If desired, toast the bun in an oven. Toasting brings out the delicious butter flavor in the brioche!

5. Add to Bun: Scoop desired amount of shrimp salad into toasted bun and enjoy!

Tips and Variations:

• Shrimp in Shell: In the video, we used frozen shrimp in the shell. Cooking it in the shell allows for more flavor in the shrimp! Cook, cool, and then easily peel once cooled!

• Protein Alternatives: This salad would also be delicious with grilled chicken, seared scallops, or even canned tuna.

• Additional Vegetables: Feel free to add other vegetables like bell peppers, shredded carrots, or artichoke hearts.

• Make Ahead: You can prepare the shrimp and chop the vegetables ahead of time. Store them separately in the refrigerator. Assemble and dress the salad just before serving to prevent the greens from wilting.

• Spice It Up: For extra heat, add a pinch of red pepper flakes to the shrimp while sautéing or to the dressing.
