• Brioche Gourmet hot dog buns

• La Bella Romana homemade chili (in a small cast-iron skillet or disposable foil pan)

• Sliced American cheese

• White onion, finely diced

Cooking Guide

1. Fire Up the Grill & Warm the Chili

Put chili in a skillet or foil pan, then place on the cooler side of the grill grates so it warms gradually while you cook, stirring occasionally.

2. Grill the Franks

Place the Vienna Beef franks directly over the heat source. Grill for 5–7 minutes, turning frequently, until light char marks form and the casing gets that classic snap. Move them to the cooler side near the chili to stay hot.

3. Toast the Brioche Buns

Put buns directly on grill to heat. Watch them closely— as these buns already have butter and brioche has a higher sugar content and toasts (or burns!) very fast.

4. Assemble & Melt

Place a hot frank into each toasted bun. Lay 1 slice of American cheese directly over the hot frank—the heat from the beef will instantly kickstart the melt.

5. Top & Serve

Ladle warm chili generously over the cheese, shower with finely diced raw onions, and serve hot right off the grill!

• The Anti-Soggy Shield: Lay the American cheese directly on the hot frank before adding chili. The cheese acts as a flavorful barrier that keeps the soft brioche bun from soaking up liquid and getting soggy.

• Pickled Red Onions or Jalapeños: Swap the raw onions for quick-pickled red onions or fresh sliced jalapeños to cut through the richness with bright acidity and heat.

• Crispy Shallots: Top with store-bought or homemade crispy fried onions for an extra layer of crunch.

• Smoked Cheddar or Pepper Jack: While classic American offers the ultimate melt, freshly shredded sharp cheddar or pepper jack adds a bold kick. Toss the grated cheese on top and close the grill lid for 30 seconds to melt.
