Classic Sausage and Peppers with Creamy Polenta

Ingredients

• 1 tbsp olive oil

• 1 lb Sicilian sausage (cut into 3.5in-4in links)

• 2-3 green bell peppers, sliced and about same size

• 1 container La Bella Romana homemade marinara sauce

• Colavita Instant Polenta

• La Bella Romana grated Parmesan cheese (about 2tbs)

• Salt and freshly ground black pepper to taste

Cooking Guide

1. Start by getting water boiling for the polenta, add salt and pepper once at a rolling boil

2. Prepare the Sausage and Peppers:

• Heat the olive oil in a large skillet or sauté pan over medium-high heat.

• Add the bell peppers. Cook over medium heat, stirring occasionally, until they start to soften about 5-7 minutes.

• **begin preparing polenta at the same time as sausage and peppers are  cooking**

• Add the sausage links and cook, turning occasionally, until you start to see some browning

• When sausage is about halfway done, pour in Marinara sauce and allow to finish cooking in sauce

3. Make the Polenta

• Make polenta according to directions on the Colavita box, stirring often

• Add parmesan to your preference (about 2tbs)  and with only a few minutes left, add about 1tbs EVOO to polenta and whisk

• Remove from heat, but allow to sit in pan to cool and set when finished

4. Serve:

• Spoon a generous portion of the creamy polenta into a bowl.

• Top the polenta with the sausage and pepper mixture, including plenty of the delicious sauce.

• Garnish with fresh basil or parsley and a sprinkle of extra Parmesan cheese.

• Serve immediately and enjoy!

Tips and Ideas

Vegetables: Feel free to add other vegetables to the mix. Mushrooms, zucchini, or even a handful of spinach can be stirred in during the last few minutes of simmering

Spiciness: Add crushed red pepper flakes to your liking, or add a pinch of cayenne pepper for extra heat. You can also use our hot sausage!

Make it a Sub: Forget the polenta and serve the sausage and peppers on a toasted hero or sub roll with a slice of provolone cheese for a classic sandwich
