

• 1 box Betty Crocker Delights Lemon Bar Mix (plus eggs, and water called for on the box)
• 5–6 fresh ripe figs, thinly sliced
• 1 fresh lemon, sliced paper-thin (seeds removed)
• Powdered sugar, for dusting

1. Prep oven: Heat to 350°F
2. Prepare Crust:
Follow directions on the box to prepare lemon bars. Press ready mixed crust into pan and bake for 10 minutes
3. Mix filling & add fruit toppings:
Whisk the lemon filling, eggs, and water according to box directions. Pour over the hot crust, then arrange fig slices and lemon slices directly on top of the wet liquid.
4. Bake:
Bake for 28–30 minutes, or until the filling is set in the center and the edges are light golden brown.
5. Cool, chill & serve:
Cool completely then dust with powdered sugar, slice, and serve!
Tips and Tricks
• Slicing the lemons paper-thin (a mandoline works best!) is the secret to making the citrus wheel topping tender, sweet-tart, and easy to bite through.
• Master the Slice: For clean, sharp edges, chill the pan in the fridge for at least 1 hour (or 20 minutes in the freezer). Wipe your knife blade with a damp paper towel between every single cut.
• Pat the Figs Dry: Fresh figs hold a lot of surface moisture. Gently blot the cut sides with a paper towel before placing them on the wet filling so they don't release extra water into the custard.
