

• 1 lb boneless, Mediterranean marinated chicken breast
• ¼ lb pearl valley swiss cheese
• 12 slider buns (Hawaiian sweet rolls work best)
• 1/4lb la bella romana roasted red pepper salad
• 1 medium red onion
• Baby arugula
MARINADE:
• 2 tbsp olive oil
• 1 tbsp red wine vinegar
• 1 tsp garlic, granulated
• 1 tsp dried oregano
• Pinch crushed red pepper
• Salt and black pepper to taste

Slice 1/2 red onion thin and marinade with dressing
Grill chicken breast to 165 degrees
Toss 2 cups arugula with marinated red onion set aside
Toast Hawaiian rolls
Drizzle rolls with natural Ju from chicken breast , layer the Swiss cheese, chicken breast, roasted red pepper salad and top with the marinated red onion and arugula
Press sandwiches together and cut along the bun separations
Plate and serve
