Summer Salad

Salad Ingredients:  

4 ripe peaches, pitted and diced (thinly sliced peaches work too)

1 small red onion, thinly sliced

8 ounces fresh mozzarella cheese (we used Caputo orecchiette)

5oz spinach and arugula salad mix

Roasted, salted pecans for garnish

Peach Vinaigrette Ingredients:

1-2 large ripe peaches (Washed, peeled, and pitted)

⅓ cup extra virgin olive oil

⅓ cup balsamic vinegar

½ teaspoon sea salt

¼ teaspoon black pepper

¼ teaspoon oregano

¼ teaspoon granulated garlic

¼ teaspoon red pepper (optional)

Cooking Guide

Prepare the Salad Ingredients:

Wash and slice the peaches and red onion. Drain the water out of the mozzarella cup.

Make the dressing:

In a blender or food processor, combine the chopped peach, olive oil, vinegar, salt, pepper, oregano, granulated garlic, and red pepper. Blend until smooth, adjusting  the consistency with a little more oil or water if needed. You can also whisk all the ingredients if preferred (just be sure to break up the peach flesh)  

Assemble the Salad: In a large bowl, combine the mixed greens, sliced peaches, red onion, and mozzarella cheese.

Dress and Serve: Drizzle the vinaigrette over the salad just before serving. Garnish with the roasted pecans.
